Sun-Dried Tomato Teriyaki

MMMmmm… Delicious! I have created something new to me yet again! It is not to say that this is new to the kitchen, just new to mine. I’m pretty excited.

So today started like every other Monday, with me frantically searching for a legitimate reason to stay in bed with my favorite dish, rather than going to work. Unfortunately, still in a haze from the weekend, I was unable to think of any reason other than “I don’t wanna!”. So after a good bit of mental preparation I left for work.

Fast forward 12 hours later, and I am on my way home thinking about what I can do with the half a jar of sun-dried tomatoes in my refrigerator. I initially used a few spoon-fulls of it to compliment my very first bowl of homemade hummus. It was a traditional recipe, but the sun-dried tomatoes made it quite divine.

So in thinking what I could do, I decided to use the bone-in, skin-full, chicken thighs that were already thawed out. So with these two things I set out on a mission to find two or three additional ingredients that would quickly combine that I could marinade the chicken with before baking. I almost went with balsamic vinegar, but thank god I didn’t. (You see I have no formal training, and I tend to just mix by scent.) I grabbed the vinegar. Aha! Behind it stood a bottle of Teriyaki Sauce that saved my night!

I added half a bottle of Teriyaki Sauce to the rest of the sun-dried tomatoes. I instantly fell in love with the combination, and decided to try and bring it together. I added a dash of paprika and cumin, salt and pepper, and viola! Sun-Dried Tomato Teriyaki Marinade!

The rest of the preparation was fairly basic. I added the marinade, olive oil, salt, and pepper to the chicken and baked it in a glass pan@ 415 for an hour.

On the side, I made white rice, very plain. – That’s how I like it. – I also, cooked up some fresh vegetables which are a must with any meal. A bundle of asparagus and white onions, sauteed in butter with salt and pepper, rounded out the Monday night meal.

All in all pretty good.
